I DID IT! Made it through the first day, and it was surprisingly easy. I was thinking of also counting calories but that's just to complicated. I'm going to concentrate on eating tasty gluten-free food and then eventually get to the healthy stuff. Also, I can't wait to get back to exercising more regularly, hopefully this new diet will let me feel better so I can start running more.
So let's go over my meals:
Breakfast was a bowl of Gorilla Munch with lactose free milk.
Result: DELICIOUS as always, not my first time eating Gorilla Munch, a good first breakfast.
Lunch: vegetable sushi.
Result: Not terribly filling, also I didn't have any Gluten-free soy sauce so it was pretty bland.
Snack: Barbeque chips.
Result: Much needed after the boring lunch, I was starving! I need to find a good sushi place around here. I've heard good things about Wasabi Wok
Dinner: 2 scrambled eggs, 3 turkey sausage links, 1 gluten free waffle and some cantaloupe and a glass of orange juice

ReplyDeleteThe October issue of Vegetarian Times has 4 different recipes for gluten-free pizza crusts--my co-worker gave me a copy. Come on over and we can test out the recipes! We can even get some Red Bridge gluten-free beer to go with it!
