Monday September 28

Hooray! I made it through my first full week of gluten-free eating and you know, I think I'm definitely starting to feel better. Not completely, but I have certainly noticed a difference. I don't want to get to graphic on you, but I don't have that terrible bloated feeling after every meal anymore which feels great. However, there is still room for improvement and I know it can take a few months but I'm looking forward to it. 

Also, I've been feeling good about exercising. I normally have to plan my workouts around what my stomach will feel like and how long after I eat will I have free time and worrying about letting myself get too hungry and having stomach pains, but I've been feeling a difference. Again, not completely better, but a serious difference.

So today my mom came to visit and brought all kinds of great food! She made me a whole pot of soup which I am soo excited for and ordered some good travel bars to keep in my bag (because she saw the post from before when I was hungry and couldn't find a good place to eat), and we bought more of the breaded chicken and other fun snacks. Also, my awesome cousin Christine recommended a type of pizza which I have purchased and will be blogging about within the next few days :)   

breakfast: gorilla munch/chex cereal combo with a banana

lunch: PF Changs with mom and kelly! lemon chicken, fried rice, and lettuce wraps

Dinner: g-free breaded chicken cut up and put into the fried rice leftovers... delic!

Sunday September 27

Hey all, I wasn't very hungry today so my food plan isn't that exciting, but here goes:

Brunch:gorilla munch with lactose free milk

Dinner: grilled chicken with jamaican rice and beans, apple sauce and carrots

dinner was great and made with coconut milk so it smelled fantastic! i think the milk is still bothering my stomach. Not sure what to do about that, maybe I'll cut that out for a bit too :(

Saturday September 26


So things have been going really well. I'm surviving my first weekend! I don't even have that much to say because it's all going so easily.

Brunch:1 gluten free waffle, 2 scrambled eggs, banana

Dinner:TACOS! kelly came over and we made taco salad. taco shells, ground turkey, g-free taco seasoning, salsa, sour cream, apple sauce. Awesome.

Dessert:Popcorn and raisinets. (Movie snacks)

Friday September 25

Hey! So Friday was a busy day, this is what I ate:

Breakfast: Gorilla Munch and lactose free milk

Lunch: Chicken Pad Thai (from the box, I'm not cool enough to make that just yet)

Dinner: Kelly and I went to Nana's house where Mary made us an awesome dinner! 
filet mignon, sweet potatoes, fried onions, broccoli and cauliflower and a gluten-free brownie!

Delicious!!!

Thursday September 24

Alright so I had a ton of homework last night and didn't get to write about my day yesterday but I'm not planning on making a habit of it!
So I'll just jump right into what I ate:

Breakfast- Gorilla Munch with lactose free milk

Lunch- Apple slices with peanut butter

Dinner- Gluten-free breaded chicken with sweet and sour sauce and my incredible potato slices

also, i'm now in love with Honey Nut Chex Mix. I've never really been a fan of Chex Mix but now I can't stop grabbing delicious handfuls! Also, I am very excited about tonight's dinner. Mary and the babes are making me something gluten-free :) I'll be sure to post pictures

Wednesday September 23

Wednesday, two full days down. Well, today was full of ups and downs and unfortunately I have no pictures to show today but all in all I think you'll enjoy today's post. 

I had class this morning from 9-12 so I figured I would bring a yogurt to class with me but I scarfed that down super fast and was starving, and freezing! The classroom was so stinkin' cold. So when the professor gave us a 10 minute break, I ran to the stud to see if there was anything else I could eat, I got a NAKED drink (Mighty Mango!) and a hot chocolate. Well worth it and quite delicious.

Lunch was in Princeton, went to apply for jobs and got super hungry. This is where the traumatic part happens, I was set on getting sushi- a fun and gluten-free meal out. So I walked to the sushi place and it was closed. CLOSED! I was dreading this moment and was shocked it came some quickly, that is: the time I was starving and could not find anything adequate to eat. So I angrily found a place with a salad bar and angrily made a salad with no croutons or dressing and especially angrily paid 6 dollars for it. And as I ate the angrily made salad with my friends who were eating delicious looking footlong sandwiches I realized that the salad was actually quite good. I put some cheese in it (not too much though mom) and kalama olives which actually made a decent dressing.  I also found a gluten-free "Nuts and Fruit" bar and all together I had a pretty decent lunch. Unexpected and somewhat stressful, but not half bad. (and I felt great afterward).

Dinner was incredible. Props to my super cool aunt Mary who took me and my sister Kelly out to P.F. Changs and loving me enough to order the whole meal off the gluten-free menu. Pretty sweet that they have one, right? And it was a pretty nice sized menu, with apps and entrees, even a FABULOUS chocolate dome dessert. So dinner was not terribly healthy, but was delicious with: lettuce wraps (naturally), spicy chicken, lemon chicken, shrimp fried rice, and the super sweet dessert. Great food, great company, gluten-free, it doesn't get much better than that. (Ladies, we should absolutely make that a monthly event.)

I was also thinking of somehow measuring my discomfort level, like stomach pains, etc. I don't want to get too graphic on you, but maybe a rating scale? Anyway, after the chang I was a little uncomfortable, probably because the food was so deliciously greasy. Well worth it, but also worth noting. Scale from 1 to 10, I'd say my worst was a 6.

I DID IT! Made it through the first day, and it was surprisingly easy. I was thinking of also counting calories but that's just to complicated. I'm going to concentrate on eating tasty gluten-free food and then eventually get to the healthy stuff. Also, I can't wait to get back to exercising more regularly, hopefully this new diet will let me feel better so I can start running more. 

So let's go over my meals:
Breakfast was a bowl of Gorilla Munch with lactose free milk.
Result: DELICIOUS as always, not my first time eating Gorilla Munch, a good first breakfast.

Lunch: vegetable sushi.
Result: Not terribly filling, also I didn't have any Gluten-free soy sauce so it was pretty bland.

Snack: Barbeque chips. 
Result: Much needed after the boring lunch, I was starving! I need to find a good sushi place around here. I've heard good things about Wasabi Wok

Dinner: 2 scrambled eggs, 3 turkey sausage links, 1 gluten free waffle and some cantaloupe and a glass of orange juice

WELCOME!
Hello All! So I've recently decided to try a Gluten-Free diet for the next few months. I've had stomach problems since I was young and I hear a G-Free diet is the way to go. So I want to give it a shot, but it's not going to be easy. Gluten is found in many many daily foods for example, things I will not be eating include: wheat, rye, and barley: which are found in bread, croutons, flour, breading, soy sauce, buns and rolls, orzo, BEER! That's a lot of stuff. As a college student I feel like this is going to be especially hard, my previous meals were mainly pizza, ramen, and cookies. All gone now. It's going to be a challenge but I think this blog with be helpful to motivate me. I recently watched "Julie and Julia" where Julie blogs about making all of Julia's recipes in her cookbook. I plan on doing something similar to this, blogging about my journey through the first 6 months of my gluten-free diet.

Today:
Dinner, Gluten-free rotisserie chicken with bbq sauce and sliced potatoes with olive oil, salt, pepper, and basil. DELICIOUS!

Goal: get through tomorrow, a whole day, and look for a g-free college group. I feel like most of the literature is aimed a parents with children with Celiac's. It would be interesting to see how college students are dealing.
