Alright, alright, I'm horrible at postings. But midterms are finally over and... okay no more excuses. So I've been doing well! 5 g-free weeks down and I'm feelin' good! I went for a run today, 4 miles. My stomach hurt a little but not enough to stop me. I should have eaten differently before the run but I'll plan better next time (tomorrow). Nevertheless, I'm still very impressed with myself and how nicely my body has treated me.
 So yesterday was the first family party and I must say, shout-outs to my fabulous family members who went super above and beyond to make an incredible dinner AND gluten-free additions just for me. They are amazing. G-free pasta, breaded chicken parm! (with parmesan cheese because I'm also allergic to dairy) even desserts, cookies and cupcakes. Awesome awesome awesome. 
So tonight I'm having some chicken that my momma made me and I'm thinking of putting it over a salad, I have some spinach that needs to be eaten soon and some veggies. Also, this really good Wegmans honey mustard dressing (highly recommend it). Speaking of food from my mom, Glutino makes these vegetable crackers that go extraordinarily well hummus. I had that for lunch (and a few snacks).

Monday, October 5 Starting Week Three!

AH! I'VE BEEN SLACKING! I'm sorry sorry sorry if you've checked in and haven't seen any updates. It's midterm season and studying has been in full swing. But I think this is an interesting thing, see I would like to think that my lack of posts has something to do with how easily this whole process is going. (although that may just be an excuse) On today, Monday the 5th of October, I am about to embark on my third week of g-free eating. So I started writing down all of the food I was eating so that I could enter it here, but that might be boring to see, so I thought I would give you the highlights (and boy are there some highlights!)

Lets see: Number 1 best event, Pizzeria Uno's has a Gluten-Free pizza, and its DELICIOUS!
I tried Amy's g-free, lactose free pizza, not so good. 
Mom has made multiple delicious meals! Including chicken soup and chicken and shrimp over rice (which I have leftovers from and will be eating for lunch momentarily)
Also, I have g-free cookie mix and will be making them in the near future

Saturday I went to have lunch with a friend from high school and I told her I wasn't eating gluten, preparing to have to tell her what it is and what I can't eat when, when she said that her roommate and multiple friends have celiacs or gluten allergies and she even went back to her apartment to get g-free soy sauce that we could get use at an awesome hibachi restaurant. Thanks Grace!

check it out, its amazing! the list of restaurants with g-free menus is awesome. Olive Garden, Five Guys, the Pop Shop! YEAH BABY! 
Also, I found some g-free apps for my ipod touch. pretty cool stuff. 

and there is a bakery opening on South Street in November with g-free pastries and I will definitely have to go, so if you're interested, let's plan a trip!

Monday September 28

Hooray! I made it through my first full week of gluten-free eating and you know, I think I'm definitely starting to feel better. Not completely, but I have certainly noticed a difference. I don't want to get to graphic on you, but I don't have that terrible bloated feeling after every meal anymore which feels great. However, there is still room for improvement and I know it can take a few months but I'm looking forward to it. 

Also, I've been feeling good about exercising. I normally have to plan my workouts around what my stomach will feel like and how long after I eat will I have free time and worrying about letting myself get too hungry and having stomach pains, but I've been feeling a difference. Again, not completely better, but a serious difference.

So today my mom came to visit and brought all kinds of great food! She made me a whole pot of soup which I am soo excited for and ordered some good travel bars to keep in my bag (because she saw the post from before when I was hungry and couldn't find a good place to eat), and we bought more of the breaded chicken and other fun snacks. Also, my awesome cousin Christine recommended a type of pizza which I have purchased and will be blogging about within the next few days :)   

breakfast: gorilla munch/chex cereal combo with a banana

lunch: PF Changs with mom and kelly! lemon chicken, fried rice, and lettuce wraps

Dinner: g-free breaded chicken cut up and put into the fried rice leftovers... delic!

Hey all, I wasn't very hungry today so my food plan isn't that exciting, but here goes:

Brunch:gorilla munch with lactose free milk

Dinner: grilled chicken with jamaican rice and beans, apple sauce and carrots

dinner was great and made with coconut milk so it smelled fantastic! i think the milk is still bothering my stomach. Not sure what to do about that, maybe I'll cut that out for a bit too :(

Saturday September 26


So things have been going really well. I'm surviving my first weekend! I don't even have that much to say because it's all going so easily.

Brunch:1 gluten free waffle, 2 scrambled eggs, banana

Dinner:TACOS! kelly came over and we made taco salad. taco shells, ground turkey, g-free taco seasoning, salsa, sour cream, apple sauce. Awesome.

Dessert:Popcorn and raisinets. (Movie snacks)
